I guess it was about 4 or 5 min per side. I set the burner on just below medium. These were the normal size so you can't cook them to fast or they will still be raw in the middle. To slow and they will suck in oil.
If you want a good crunchy crust then yes that would be correct. In my Tonkatsu video I took it to the extream. Egg, flour, egg, flour, egg, Panko then in the cooler for everything to bind.

Mirin, can sometimes be found in the Asian section. If not most Asian markets have it.
Sake can usually be found where ever you buy wine. For cooking I usually use the cheap American stuff.
