I'm a drummer as well. I used to make cajons, and now work in the drum dept of Guitar Center. There is so much that you can do with the cajon (and other little percussion instruments) that make it perfect for acoustic settings. Everyone from Santana to Justin Timberlake are starting to use them for recording now.
Good rhythm, good posture also, not bad at all by these guys. And as far as cajon filling in the job of a kit, forget it. A cajon in not a drumset. You essentially have two sounds. Do this at home, take away all your cymbals and toms, and stay with the snare and bass drum only and see what you can come up with, that's pretty much all you have on cajon. But it is really neat on its own as a percussion instrument with its own inherent sounds.
It's purpose isn't to fill the entire space of what is possible by a trap kit, but can do the same basic sounds as a very small kit; and, you can do quite a bit on a small kit (with only a snare and bass drum, or even a single snare or bass drum!) if you have any sort of competency whatsoever. Watch jazz drummers and you'll likely get the idea.
