  • @psykosomatiq This recipe kinda' morphed over a couple of years from a few recipes I liked. I like the smokey flavor of a little cumin. That being said, google carne asada recipe and you'll find that about 90+% of the recipes have cumin. I'm not Hispanic and this isn't some recipe passed down for generations. I live in SoCal and LOVE Mexican food and I'm pretty fond of the way this marinade tastes. Take care

  • @OhRomeoBand No worries... For some reason, posting Mexican food is real touchy. My comments range from "The best!" to "Not legit"... Understand, I grew up (and still live) in San Diego, a rocks throw from the Mexican boarder. Mexican food is very regional, like Italy. I've noticed huge differences in the Mexican food I eat, compared to the Mexican food in Texas, or even Arizona. And in Tijuana compared to Cabo.

  • my inlaw just made some carne asada at his home for thanksgiving and i loved the taste. all he put was Chef Merito meat tenderizer and lime juice. the meat is called " diezmillo" or "espaldilla"

  • @NyYankees1985 sorry but you cant send this type of meat through mail, it would actually bleed out quickly it would lose the red color and it would be brown before you even grill it I work at a mexican meat dept so i know i bit about this. your best bet is to go to a mexican store that has a meat dept and ask them for arrachera, it comes sliced in half for the grill. Then ask them to pass the meat through "la maquina" its a meat tenderiser this will make your marinate sauces blend 100% better.

  • @Al3xTrucho20 Here in San Diego (right on the Mexico boarder) fajita is seasoned beef or chicken cooked on a blazing hot cast iron skillet with onions and peppers, then served on the skillet with flour tortillas. Grilled like this is carne asada... Pollo asado for chicken. Maybe it's different where you live? Thanks!

  • Well done! This is almost exactly the way I was taught to make carne asada.I grew up in California and Mrs. Estrada taught me to do it this way. She didn't speak English but she showed me how to do it. Very authentic and I've been doing it this way for 30 years. Now my grandkids make it this way.

  • I FINALLY made this yesterday! I went to a Plaza Latina by my house and got the ingredients (I would advise at least getting your meat from a store like this-best place I've found so far). I changed a few things-partially out of laziness-instead of the seasoning mix I used a pre-made one called Carne Asada by El Mexicano(made in CA. LOL), then added cilantro and your other ingredients.

  • The butcher in the meat department there suggested it and that's what they had on their pre-made meat also, so if you're lazy like me-it was DELICIOUS!!! Also, instead of the beer I used a few shots of tequila(we're not beer drinkers) THIS RECIPE WAS AMAZING!!!! Best thing I've ever made hands down.@sd4547 Thank you for your guidance! And I'm not laughing at your not knife, perfect tool for the job! :)

  • Hey man, I really love the fact that you used the mortar and pestle to grind the dry and wet ingredients to create a form of paste. I graduated from a culinary school in Hollywood and they just had us use a cutting board to chop everything and sans the orange juice, cumin, ground cloves and mexican oregano in the recipe:( Have you ever used a tad bit of achiote paste on carne asada? Anyway thanks for posting bro!

  • @CHICO5909 Usually I wouldn't cut the meat on a wobbly TV tray like that, but it worked best for me in order to keep the camera where it was. Since then I bought a Weber Performer with a very stable built in work surface... Thanks for the info and watching. Greg

    I'm pretty sure that's marjoram. Cumin and marjoram were the first spice and herb I learned to use in Mexican cooking.

  • Thanks for sharing this! We used to go to the hispanic market and buy the already seasoned meat, then come home, and add our Corona beer and lime on the meat as we were cooking it. Where we live now, they don't sell it and I've been missing the good stuff.

  • @dabblingmum Yeah, my sister and her husband moved to an area without good Mexican food. The first thing they do when they come to visit is go out for Mexican. You don't realize how good real Mexican food is until it's gone I guess...

  • @sd4547 So I went out and bought all the ingredients and talked my husband into starting up the bbque in the snow! Luckily it was a sunny day today so the weather was a little warmer. At any rate, the taste was FANTASTIC! We tried chopping up some and cooking on a hot pan in the house to see which we prefer, of course, nothing beats the grill taste but the other will definitely do in a pinch weather-wise.   • @vochitoken The marinade has a nice tangy flavor with a little heat. After I remove the meat, I throw the marinade out.

I'm not going to disrespect you and tell a Mexican how to cook Mexican food, but I do know from my travels all over Baja that just like the US, Mexican food is very regional. Thanks for the comment.

  • @SnowyDae I used Ranchera meat (also known as flap steak) and this is how it comes. If you can't find this cut at your store I'd buy flank steak.

  • Hey man, i gotta say, im mexican, and i have seen alot of gringos on youtube totally mess up carne asada. But you did a real good job, kept it traditional. Im From San Diego California were i believe the best carne asada exist. Also Sonora Mexico is notorious for the best carne asada in the world. I personally believe that good carne asada comes from a goot cutt of meat, were no marinade is neccesarry just salt. but i am curious to try your receipe. good job

  • Great receipe. Im a mexican and I have seen al sorts of receipes but your is very traditional. I would not change a thing but grill some green onion on the side.

    I have to give you props on this recipe. I added crushed red pepper in to the marinade and it gave the steaks a slight kick which was surprising to everyone. From now on I'm using your instructions however I must say that cooking the steaks over direct heat isn't enough. The steaks have so much connective tissue that they have to cook for longer. I char them over direct heat then transfer them into a alum pan with beer over indirect heat. Then allow them to cook there for another 20 mins.

  • @wargoots1 It's really easy to make. I've found that it has a few names but plain and simple it's an avocado sauce. Here's the recipe:

    15 chopped tomatillo (husks removed), 2 peeled chopped avocados, 1 serrano chile with seeds (or whatever kind of chile you want and as many as you want depending on the desired heat), 3/4 cup fresh cilantro with stems removed, 2 tbl sp fresh lime juice, one large clove fresh garlic, 1 tsp salt.

    Toss the above in a blender and let er' rip!

  • @z4cadpro I'll tell you what, this was one of the best investments I've made for my grill. They really leave killer grill marks on my steaks, unlike the wire grate that come with the Weber. I bought them online from a company called Craycort for about $80 or so.
