Thanks to the BBQ Pitboys my grilling is up a notch from burgers and chicken pieces to grilled dinners with whole roasts, whole birds, grilled potatoes. It's GUD!
Adding coals is such a pain in the balls. All webers should have a slide out shelf underneath the grill for the coals so you can add more easily instead of fooling around with it.
@Necroticpus - check out the hinged grates for Weber, order through Amazon. About $24. Right at the grate handles are hinges that open up for pouring in more hot coals. Also helps to have one of those charcoal chimney starters with the big handle so you can pour the hot coals in. Adds a whole new dimension for grilling so you can be cooking much larger pieces of meat and not worry about removing the whole grill to add coals. :3)
I've done this two years in a row every Christmas eve dinner and my second year was the best, I actually didn't turn the turkey over mid way and it still came out great. Thanks BBQ pit boys. Happy New Year.
Man, I love you guys, but when you spun that pan around at 10:20 to keep the heating even and then rolled the turkey to put the breast side up the same side was now facing the heat again. I dont care, You guys are still the greatest !!!!!!

Hay Hank - That is an OLd Hickory - good carbon steel - it'll take a good edge...why not take it to the stone once in a while - look like ur cutting that vulture with an axe!
All I can say that these boys are really good in what they do. I've tired their recipes in past and remained undisputed in family cook outs. I been crowned by friends and family as a pit master. I turely take them as my GURU.

My kitchen still smells like wild turkey (i used burbon) gravy..and the smell is out of this world. Truth to tell...it was the most moist turkey i ever ate. Stuffing..unbelievable. I took mine off the charcoal grill about 165 yo 170 F internal temperature.

I had to watch this vid again! I tried this recipe on Thanksgiving and my bird turned out the same way, Once i cutt off that twine the meat came off the bone like nothing and never had to use a knife,it was that tender,juicy,most of all delicious!

At around 13:00 you sprayed some chicken broth into the coals with your baster and made a lot of flames. Does this do anything to change the way the turkey is cooked or tastes? Like the tangerine and the wood? Or was it just to make some impressive flames?
Looks good as always. I just bought one of those smokers that have 4 baskets in the corners for charcoal. It's supposed to give out even heat. The only down fall is that you can't save the drippings since they drip onto the ash pan. Going to try it out this thursday and while I am at it I am going to throw on some spare ribs in my water smoker as well. You guys are the best. Happy Thanksgiving BBQ Pit Boys.
I think it's because the juices get drawn out because of the heat and resting it lets the moisture settle back into the meat so you dont have dried up turkey breast

I think it's because the juices get drawn out because of the heat and resting it lets the moisture settle back into the meat so you dont have dried up turkey breast
