I would have said that "Chemistry is the set of phenomena surrounding matter, especially the phenomena dominated by the electromagnetic force on the small scale. So, with big exceptions like space and time, gravity, the strong and weak nuclear forces, large-scale electromagnetism, and the propagation of light, chemistry is basically everything." Chemistry includes most of the phenomena surrounding life, materials, and small-scale geology. It's a tough question when you're on the spot, though.
