heres a tri tip trick......when tri tip is about 10 minutes from be done....take them off and wrap each one in aluminum foil.....place them in a small ice chest.....empty,no ice!.......put a towel over them....close ice chest and now you can serve tri-tip up to 3 hours later or more.
