Oh Ya I almost forgot the recipe below will brine up about ten pounds of 1/4 inch sliced beef, I soak about 24 hours in fridge. and you can add a splash of liquid smoke if you are not using a smoker to dry it !!

Great video, i had a stack of used filters beside my water heater i had never got around to throwing away and used those and it worked out great ,they are the type with the metal mesh made on so i didnt even have to use the screen wire like you did, the used filters gave it an Earthy taste and the fuzz came right off with a old hairbrush. I didnt have a fan so i tied it to the front of my truck ,would worked better if i didnt run into rain shower at the town dump just as i got there, tank u

ALSO I would not recommend marinating in a metal dish, much better to marinate meat in a plastic or glass dish. You take the chance of actually tasting the metal in your meat.

Babba... you need to pick you up some Tender quick or some cure to mix with your marinade. Drying meat like that gives bacteria a perfect place to grow unless you add the cure. Easy to do.
