  • Searing does not seal in the moisture. What it does is it caramelises some of the meat, and because searing is high heat, it means less moisture is lost since it cooks quicker. Go watch Alton Brown to learn that searing is not about sealing in moisture. Meat is porous. You can't seal in moisture.
