  • He squeezed the water out of it, wrap in a clean towel or papertowels and squeeze the jeebers out of it.

  • @Angeltots The way I learned it: to purge an eggplant you first slice, then salt the slices liberally. Let stand for 1 hour or until water beads form. RINSE and squeeze then pat dry. This is done to remove bitterness and allow the eggplant cook without getting too soggy/sopping up excess oil.

  • This is absurd. Sure it only takes one minute to make this if you don't count the prep time for the eggplant, the herbs, the tomatos, the cheese and the breadcrumbs. That's done in super secret TV time!

  • @creamfinger If you don't include shopping time, it takes maybe 30 minutes to prep.

    Still no where near as long to do it classically.
