That's because those strings are not normal strings, they have chakra flowing through them which makes it impossible to cut or burn through. Also they can be made invisible by puppet masters so they can sneak the strings to bind the enemies from moving just like Chiyo did to Sasori's puppet armor hiroko.

One of my favortie things about this series is that every one of the characters gets decent face time. Its not like DBZ where you have to watch your faves get the crap beat out of them until the main characters get there.
