@markel253 now that you mention it, tI NEVER used a straw while sipping an egg cream at the local candy store. The foam on top created the original milk mustache.
Well I love this old time classics and there are places in NY/NJ that still make this fountain classic from days gone by. You can use any kind of chocolate syrup I use hersheys. Man I been living in Maryland & delaware area nobody down has ever heard of it ,same thing with potatoe kinish another staple in NY & NJ
@Lismetdetu if you are NYC/NJ area, it is carried in most supermarkets. Purists will disagree with me, but you can use any good quality chocolate syrup with good results.
After I moved from the Bronx, up to Putnam County, NY (just north of Westchester), my first job at age 15 was in a Drug Store with a luncheonette. I made the best vanilla and chocolate egg creams there! The seltzer came from the fountain, and yes, you do not "stir", you "paddle" ! I miss egg creams!
bro, it has to be fox's u-bet KOSHER chocolate syrup. the regular fox's u-bet chocolate syrup is the same thing as any other brand. (besides nesquick and hershey of course, NEVER use them)
ALSO, NEVER STIR THE EGG CREAM. PADDLE IT (or else the bubbles break, and and drink goes flat) and dont drink with a straw, your supposed to drink the head with the drink. and always use whole milk.
u can only get the kosher version a few weeks out of the year in new york.
Hi! do you know where i can buy that U-bet syrup here in NYC? And where can i go to have an egg cream made? Are there still restaurants or shops that carry any of this? I would love to bring my family along for the expierience! Thank you.
U-bet it pretty well known and should be available at any large supermarket. It might also be sold in smaller places as well. Most coffee shops as well as some ice cream stores such as Carvel should know how to make one. There used to be street vendor that sold overpriced egg creams but I don't think they are still around. If you are staying at a hotel, the concierge can recommend a local restaurant to you.
Great instructions! Can't wait to try this. Also, regarding the question in the comments about eggs, an egg cream has neither egg nor cream in it and never has.
Egg creams DID infact origionally have egg in it.During WWII eggs had to be rationed and therefore no more eggs in the egg creams. And it has always been the best made with Fox's UBet.
I just made this today after seeing the video. Never knew a combination like this could be so tasty. I just used Hershey's chocolate syrup and low fat milk though :(
I grew up on these in Brooklyn and Fox's UBet is the way to go. Those were the days, when we had our milk and seltzer delivered. FYI, It's called an eggcream because it originally had an egg in it.
I doubted U-Bet's clain so I tried Sorbee's Sugar free, Hershey's (regular and dark), store brands, and Nestle and probably more but nothing has come close to U-Bet's for mixability, sweetness, and flavor.
Remarkably Walden Farms Calorie Free Chocolate Syrup is quite good. The quality and quantity of vanilla they use makes a real smooth, unique, chocolaty experience.
And there are more techniques and finer points other than this. Take this video as a 101 course.
I saw these made on this documentary where Tony Danza took people on a tour of Brooklyn. I'm in Australia so obviously we cant get that brand of chocolate syrup =( I tried making one of these at the pub one night but either I think the soda water coming out of the tap wasn't fizzy enough. Seltzer is just soda water isn't it?
This was a homework assignment, so I was a little facetious about how important the use of Fox's U-bet was, even 'tho that was the brand used at the candy store near where I grew up. You can use your favorite chocolate syrup.
Seltzer is just unflavored soda water. The fizzier the better, otherwise it tastes like watered-down chocolate milk.
love the vid, the only comment I would add is that you should show your face. It would lend much better to the whole experience. Don't get me wrong, I'm still a fan of your work. My buddy says you probably have curls hanging down the side of your head and a big hat and thats why your camera shy. I say no and I've got $5 riding on it. So please don't let me down. Just show your face. Pretty please. Thanks dude.
Do you deliver for Fox's? Because egg creams can be made with other syrups and still taste good. Not all the luncheonettes and restaurants used Fox's syrup in their egg creams. Some people swear by Bosco and some by Hershey's. You egg cream snob!
Sorry Mom, I could never convey your dynamic personality in an article...it just wouldn't do it justice! And unfortunately, I have to leave your comment up because I get paid. We don't have the power that you guys have here on YouTube. FYI: Lou Reed: a respected singer/songwriter from the 20th century who had a song called "Egg Cream." There was nothing slanderous in that comment, nor was there in mine. But you chose to go that route. So here goes: Your egg cream isn't sweet enough!!
A STRAW????? NEVER!!!!!!!!!!

they used to be made with eggs, but after people found out that you can get salmonella from eating raw eggs they stopped making it like that.
