Great video and really helpful!! It's funny how you can watch someone do that a thousand times, figure you know how it's done, and never really understand it yourself until you're working with the dough...

Since it's hard to tell what she's doing once her hand covers the bun - I'm a bit rusty, but I think she says to fold the pinched part at the front inward and away from you, continue to twist and pleat, then pinch it against the folds you made earlier. The narration definitely helped me ^-^
