I've only used the "no cook" lasagna once and I preferred the regular lasagna (the no cook is thinner and I prefer the thicker style) - I don't ever boil it first - I build it the same way dry. Comes out perfect! I also like to season the ricotta a bit and add the customary egg but I could see forgoing it for a healthier meal. I look forward to giving this a try. Thanks for sharing. :)

I just tried this and it was amazing!!! I couldn't get ricotta cheese so used mozzarella and cheddar instead and I couldn't find black beans but used kidney beans but it still all worked. I'm a pretty lazy cook but this was so effective and easy. So good :o) thank you, thank you!

I omitted the beans (dont like beans with this type of pasta), didnt have the spinach and dont like red pepper with hot food. I was nervous about adding the butternut squash but found the texture was a nice addition my daughter even commented it was nice. I added green zucchini, a few leaves of chopped fresh basil and grated carrot at the end. I also used regular lasagna because I prefer the taste and thickness.
@brownnbubblie con'td I also used sliced small portebella mushrooms instead of white because they have better flavor. I wound up with 4 layers of lasagna. For spice added a scotch bonnet pepper with some of the seeds removed. The next day the flavors melded and it tasted even better. I just had some for breakfast with left over fresh Kale seasoned with garlic salt. I will be making this again because it made a lot of food and I wont have to cook for a few days

It looks great. I make a veggie lasagna also and my only advice would be to be careful not to overcook your veggies. You don't want them losing all the nutrients. :)

This looks great! I'm always on the prowl for new yummy healthy foods! =) But a quick question. Since the veggies were cooked before hand, can't you put them in the oven for a shorter period of time? Or maybe build the lasagna with fresh veggies and put it in the oven for the original time? I want to maximize the veggie's nutritional value and cooking them until they're dull in color is a sign of lost nutrition.

Or maybe build the lasagna with fresh veggies and put it in the oven for the original time? I want to maximize the veggie's nutritional value and cooking them until they're dull in color is a sign of lost nutrition.

Thank God for "No Boil Lasagna." It makes life sooooo much easier... and cleaner. The best thing about this recipe is that the veggies can be swapped. I'm a "greens" girl... 8•) Thanks for video!!
