Thanks for the reply. I know I have to soldering both sides. I'm using Cadsoft Eagle as my designer, which I'm currently heavily reliant on the auto-router for 2 sided PCBs. I'm new to this software, and it has a tendency to place vias on component legs. This is often topside under packages where it is remarkably difficult if not impossible to solder. It's possible to void routing areas, but this is no good for "legitimate" under component routing. I have yet to get my head around this!
Good job Norm! Your axial leaded bends look perfect. Did you use a Speedy Bend lead former, the red plastic jigs?
What temp do you solder SAC alloy at? Do you go 700F? If you guys are still using the Metcal MX 500 Talon then you are either locked in at 600 F or 700F.
Do you have any videos on how to desolder these through hole components easily without that vacuum desolder machine that I have seen in another one of your videos?
I think he makes up for it in other areas. He's an MIT at BEST, INC. Norman is one of the very best Master Instructors in the country and his soldering is 110% all day long.

Almost all electronics stores do sell liquid flux.
I have over 20 years experience in electronics and have discovered liquid flux about seven years ago. Since, i ALWAYS use liquid flux to solder, especially with SMD devices and lead-free solder.
Liquid flux allows faster soldering time and consequently, less damage to the board.

Does this technique work for 2 sided boards without through plated holes?

You will need to solder on both sides of the board.
