The biggest problem is most likely that our brains might be incapable of interpreting things like echolocation or bigger spectrums of light. A person born blind can't process vision because that part of their brain has not been developed. Information like infrared would have to be reinterpreted by software before it could make sense to us.

That's actually incorrect. Some experiments have fixed basic video cameras to the visual centers of blind people's brains, and they do in fact see, even though those areas of the brain have never been used for that purpose.

Thus, the problem isn't that the brain is incapable, it's just that we don't fully understand its mechanisms yet.

I guess I misinterpreted what I heard. I was under the impression that the blind who were attached to cameras generally reported an incredible amount of pain/distress and could not tolerate it for long, but I am no hobbyist on the subject.

For some it is distressful; they're experiencing a sense they've never had before (in some cases) and realize everyone else has been experiencing sight. I think it's more of an emotional impact than a physical pain, in those cases. Although, given that these are connected to the brain in some way, it's not out of the question side effects might exist. Perhaps, even, it's similar to suddenly turning on a bright light after sitting in a dark room for an hour.

Heehee,I think it's slightly more dramatic than that, but I guess it's an apt analogy.

Consider, though, that normal vision being restored to a blind person, even one who is born blind, is significatlly different then creating space for an entirely new sense. You are in effect "restoring" vision in the part of the brain that is allocated for that function, but "creating" an unprecedented space for a new sense. I think that's where the problem arises.
