Also, Arich's venom (officially) can be easily dodged by hiding under the right hand branch and putting the barrel down (hold D-pad down and let Y go)...also, Kiddy can hit Arich by just acting like he's Dixie and holding a barrel while under him.

The birds have BARRELS in that level that will fall and float in the water, making new platforms. That's how you're supposed to make those jumps.
