So my question is why did Kokujin pick SA1 vs Makoto? What makes SA1 a better selection in that match up?

Kokujin = Pizza Beast.

He delivers pizza, the beast reference is probably because of his trash talk to daigo:

"This guy is so weak. Come out, whoever said this guy (daigo) is a god, I'm going to kill him." Then later, "You are really weak. People have habit of calling you god, god! More like you just run away! Game shouldn't be played like that!"

Dudley's 623+P is Jet Upper, the ex version has 4 invincibility frame, Kokujin uses it a lot, so Nuki and other calls the ex Pizza Jet Upper.

Rather than national coach dan matches, it's more like Nagoya players (kokujin, hirochan, yoiyami) versus Tokyo.

Nuki mentioned pierrot, the best remy, has promoted to 猛者(Man of valor) after beating 7 chuns.

Nuki is surprised for the lack of chun-li in coach dan (2nd highest dan) because the best chun (MOV, Nuki, Rikimaru) earned 智将(General) title already.

Kokujin became the first player in general dan not using top tier (chun, yun, makoto/ken).

@hismit It depends on the rank. Low Dan players only need 3 matches to get promoted, for example.

There is a video of Mimora vs Kazuya like about 20 minutes long almost, both of them just going at it. I would love to see a video of Aiku vs Kokujin for 20 minutes, well as long as possible XD just going at it!
