  • Huge Alton fan! This recipe makes darn good bread. The only issue I have is kneading the dough on medium speed and boosting the speed if the dough climbs up the hook. The kitchenaid mixers are very clear about NOT going over speed 2 while using the dough hook. I've made this bread several times with excellent results using the slower speed. Other than that, it's a great episode!

  • You don't measure flours by the cup because you're never sure how packed they are. Try it, sift flour into a cup and level it then weigh the result. Now scoop a cup from the pack and level it, then weigh that; significant difference and, the difference becomes greater the larger the amounts you are working with.

    Weigh the flour.

  • Love the smell of bread in the oven. Be sure to let your bread cool on something that lets the extra moister escape from the bottom like well a cooling rack.
