Fabulous demo. The one thing that *might* make it easier would be doing a flat 180 degree turn .. not showing the "back" of the knitting at all. Doing this you'd always be knitting into/on the stitches on the top needle. I've always used a long circular, but this using the double pointeds is totally cool. Thank you!!!!

Doing a Kitchener stitch (grafting) to bind off will closely match the Turkish cast on.
