Get a small pan smaller than the one she's using, never use a spoon, get the pan absolutely smoking then get a very large amount of cold butter and put in the pan and shake the pan and what you are doing is caremalising the milk solids, see if you put large amount of cold butter in a very hot pan it won't burn she put a very small amount in a big pan and if you aren't experienced enough you can burn it.
