Hey BigAl, Is there anything that can be substituted in for the miso? I looked in every store in the area and cannot find any place that sells miso. I looked online for it but it is almost 25 dollars for the miso and the shipping cost... Any suggestions?

I can see alot of ways you can turn this into a series. You can do a dish from a different nation/region in each episode. You can have someone ask what can I make with only these ingredients and you can make a nifty dish (this one is for the college guy with no money per se). Nice open though.

It has a nice smoky flavor with a bit of salt, and just to let you know, Bonito flakes are made from dried and flaked fish.
