@SuperLEO130 That's what the instructions are for of course! ;o) After cutting out the parts, you have to figure out what they should look like assembled, and then fold and shape them so you can glue them together that way.
If you do a Google search for "yamaha papercraft tutorial" you will find a good beginner's tutorial. Papercraft isn't very difficult, but it is easier if you have experience. Sora isn't the most difficult, but if you're not sure, you can practice on easier ones.

@PONTONRULZ I think it's just a matter of experience, and most importantly, taking your time to make a paper model look good.
Sometimes I take a long time curving or scoring and folding a part before I glue it together. The better you do this, the easier it will be. ;o)
For this model, I also coloured the white edges of the paper parts with magic markers or pencil to get rid of the white lines on the model, it helps a lot in making the model look better, especially with darker colours! ;o)
@RedLink1000 It's very difficult to bend the fingers in such a way that Sora can hold the Keyblade in his hand, so if you want to make sure it won't fold out of his hands, use glue or doublesided tape (or fold double regular tape ;o).
@loudardie I'm a big KH fan, so there's a big chance I'll do Roxas in the future! ;o) But I also have many other ideas for paper models that I'd like to make, so I can't promise it will be anytime soon, sorry...
@RedLink1000 Yeah, that spiky "anime-hair" always looks very confusing to build at first, so I made some extra steps for it in the instructions compared to the simpler parts.
I think the "trick" is to really take it one step at a time, so you don't get (too) confused. ;o)
@sneakylie If you look at step 8 in the instructions and further, it should give you some clues: you should only glue the two ends of the strip together to make a "ring" (using the two alternating glueing tabs) that will make his waist.
The small pointy triangular parts (a blue one and a black one) aren't connected to anything yet, they will be glued between the legs in the next step.
If you don't close the top of part 11 yet, you can still reach inside when you glue it to the legs!

I would definately like to do a papercraft of model Sheik some day; I like the N64 games, so an Ocarina of Time Sheik is definately a possibility, but I might end up doing a more detailed Sheik from Brawl or Melee as well... ;o)
I'm afraid I don't have any experience with the game Spore, but if there is a way to extract the game models, you can bet the fans will know about it, so I would go searching for a possible way on fan forums of the game.
And like GPSC998 says, if the game uses a DirectX9 engine, you could try and see if the 3D Ripper DX program works.

@bilnabiln It really depends from case to case: sometimes it is, and sometime it isn't. But it's always time consuming. ;o)
The key thing is to take your time, and pre-shape everything properly; that will really make things much easier.

@jadenjak if you have Direct X 9 you can use 3D Ripper DX... that's the only option I know of.
