OMG thank you so much for posting this. My family were Russian Turks. My mom made these. I can't believe I didn't get the recipe or watch more often. I miss my mom terribly and these wonderful dishes she made from the old world.

a brioche type dough sounds awesome!!!!!! i can't wait to try your dough recipe. armenians from iran or armenia or russia have a fried version, but i rather have a baked version.
@hyelady47 I also make a fried dumpling called Samosa (from India) with a potato / peas / lemon juice spicy filling. It is a lot of work - of course - and the dough is harder to use (the dough is drier). The Samosas are wonderful, but I make Pirozhkis more often. I don't like to deep fry very much, I guess. Another baked version is Empanadas, from South America!
my recipe calls for hard boiled eggs as well, but now i can't wait to put some sour cream as well, i put the filling into puff pastry, but i'm looking for a true dough, thanx for a great demo
