I suppose the grain would cause it to drop so just wanted to know how much to compensate. Do you add much more water to make up for what's absorbed by the grain? No. 1.25 qts per lb. So that would mean 5*1.25 = 6.25 qts. Divide this by 4 (because there are 4 qts per gallon) and you would get 1.56 gallons of water, or, a little more than 1.5 gallons of water for your mash and you would use 1.5 gallons for your sparge as well. Let me know if you have more questions. I hope this helps.

Can any all-grain recipe be adapted to smaller counter-top recipes, or are there any tricks for smaller batches? Will I need to add any DME?

All all-grain recipes can be down sized. I'd suggest having at least 1 lb dme on hand for all all-grain batches.

You can, just make sure the gravity of the run off doesn't go below 1.010.
