teflon causes joint pain because if it is used to cook it can get into the food then once it goes into your body it goes straight to your joints and it will feel like glass... so (said sarcastically) YAY FOR EARLY ARTHRITIS!!! stainless steel is the most sterile metal... it will "stain" but no surface anything... just tarnishing. The wine was 2 euro probably because it is a "bon vin" I believe. Since wine is enjoyed in France in almost all meals, "bon vin" is sold at low prices so that all people in all social classes can afford it. Just a little advice. Stainless steel pans are not so bad. Just let the tuna (or any other protein) sear a little before you turn them over. That way they they will brown and won't stick to the pan. Good luck next time.

As @n1spirit sayed, you can 'deglaze' the pan by adding a small amount of liquid(wine/water/stock) to the pan after the meat is done and it will release all the caramel(brown stuff)from the pan. Let is reduce(cook down), season the reduced sauce and pour onto the meat/chicken if you wish. It's a great way to clean the pan and get more flavorful dishes. If you want a rich sauce, add a tblsp. of butter to the sauce OFF the heat and stir 'till thickened. Yum. And save lemon for after sauteing:)

If you need use a spray for frying/sauteing there are Pump type spray containers that you can fill with your favorite oil. You will find them in up-scale Culinary stores and some are really well designed and will last a long time. 2). Try cooking with olive oil as a staple and gradually get some others such as grape seed. Combine olive and canola oil.3). Oil the fish-meat before frying.

Interesting, but I was surprised by one thing - it looked like you didn't wash your hands after handling the raw fish. Also, you don't have to put a hand or finger to the pan to see if it's hot enough - OUCH - you can flick a few drops of water in - if they sizzle, it's ready.
I am fascinated, you leave in Germany but you US shopping (even in US Dollars not in Euro !), US malls, US party friends ... Never try local products ?

Shopping flights to the US are no coincidence! Top quality + unique items not counted! -- German party friends like to go to US parties... Can you blame them?

A trick for keeping things from sticking to your stainless steel pan
1) Never heat the pan over more than medium heat
2) make sure the pan is fully heated before adding fat
3) add olive oil to coat bottom of pan (add more than you think if necessary) and bring back up to heat
4) add the item and make sure it is fully cooked (brown) on that one side before flipping

03:00 - cell phone buzzing! Ugh! Can't hear about the dent on the car. 03:50 - relief from the buzzing cell phone just in time for the cooking part. I think there is a better way to find out if the pan is hot enough other than putting your entire open palm in it--LoL! Oh & I think iron skillets are the best over teflon and stainless. $10 Friday for two was awesome!! Love the way you clear&set the table. Oh no'z! There goes ur diet with the beer!!

You DO remind me of James Dean when you wear your glasses... and no matter what the boys here or anywhere say, you get HUGE points from me for making a simple cooked meal for you and your man. Definitely a keeper.
