If you like a crust with big air pockets, don't roll the dough. You oven is hot enough. I usually bake at 400F which is just over 200C. If the crust was too big for you, divide the dough into smaller (more pieces) units, round them as in the video, and make sure that you let them rise/rest (covered) until they at least one and a half times in size.

Except i really wanted the crust to have small bubbles, but there almost none of them. Maybe you know how could i get those bubbles to pop? I have an oven which goes only to 250C. @James0roll1 Small tears can be patched together, but for major repairs, you may need to re-round the dough and let it rise again. If you try to stretch the dough when it isn't ready, it will tear. Good luck.

@sweetfeat1 I measure my flour by weight and try to always use the same type of flour, King Arthur Bread Flour. However, sometimes I do need to add extra flour or water due to changes in humidity, temperature, water and even flour variations.

@FromSouthforkTexas The dough may be used to make bread, but watch my French Bread video to see how to shape and loaves. Of course, not all bread is shaped the same way, but this will give you one method.
i want to ask you, while working in pizza place, we used to mix yeast with warm 1cup water, then add 1cup and 1/4 flower and make a sticky dough, then place it in a pizza pan, and wait for it to rise, then bake it immediately without kneeing. i guess the pizza restaurants use this methods to save them time? so do you recommend their method to make at home?

Saw this video today and went out and got the ingredients (£15) and made pizzas.
I didn't follow the guidelines strictly but was well pleased with the results.
Criticisms from the three boys were: Tomatoes on base needed to be liquidised.and it was too cheesy.
That said the amount that I actually made could have fed an army so it isn't an expensive hobby and will make some more next week.

Susan, you work against the magic of yeast & dough. 5-8 minutes of kneeding is absolutely not needed.
Do this experiment:
1) Combine your yeast/sugar/flour/water, and just mix it in a rough ball.
2) Let it rise, and you will see it reaches a Maximum rise.
3) Now kneed the dough a few times and let it rise again.
4) Notice that the dough has risen much more thus is more flexible!
What can we conclude? That rising creates flexible dough! Let rising do the work, not your hands. rest is up 2 u

@ssady so the reason why my dough turned into rock was because i cooked it in microwave oven?? some says i put too many yeast and less flour... have u ever tried it with microwave?

@ssady. Can I freeze the left overs dough? If I can, How should I do it and how should I taw it for other day? Also, how long can I leave the dough on the fridge if I decide to make pizza 2 times during that week?

@FromSouthforkTexas The dough may be used to make bread, but watch my French Bread video to see how to shape and loaves. Of course, not all bread is shaped the same way, but this will give you one method.

i want to ask you, while working in pizza place, we used to mix yeast with warm 1cup water, then add 1cup and 1/4 flower and make a sticky dough, then place it in a pizza pan, and wait for it to rise, then bake it immediately without kneeing. i guess the pizza restaurants use this methods to save them time? so do you recommend their method to make at home?
