ideally, you should let the pasta cool to lukewarm (dressed with some sauce so it doesn't stick) but I had no time - needed to get the dish assembled before my guests arrived and messed up the video - so i worked really fast- the chilled dough held up beautifully, if you don't chill it it gets too soft because of the high butter content
