  • ideally, you should let the pasta cool to lukewarm (dressed with some sauce so it doesn't stick) but I had no time - needed to get the dish assembled before my guests arrived and messed up the video - so i worked really fast- the chilled dough held up beautifully, if you don't chill it it gets too soft because of the high butter content

  • Gosh, now when I try this one it'll take me about three days assuming it works out the first time, I don't experience a mental collapse, and manage not to burn down the kitchen. But what the hell, live dangerously that's what I say.
