I see loads op people make these overflow systems with multiple tanks. Just interconnect them (not using that flexible tubing you've got going there ;-) at the bottom and the water level in all connected barrels will rise at the same time. Use the same connection to tap water from the barrels. Make one overflow outlet (same diameter as the inlet) to channel the water out of the barrels when they're all filled to the brim.

That is an overflow, not a fill. To fill two barrels at the same time, the connection has to be at the bottom of both barrels.

Some tips - connect the water barrels with PVC at the *bottom* so they will both fill up at the same time. You need to handle overflow, so excess water doesn't stuff up your foundations of your house - either put a rainwater diverter so you can manually divert overflow back into the stormwater system, or connect a large PVC pipe on a barrel and lead it back into the stormwater drain. .

I've been thinking about setting up a rainwater cistern like this using rain gutters on my house. Is the water clean enough to drink (say if the power went out etc) or is it better just to use it for the garden and such? I have an asphalt shingle roof. Thanks

You shouldn't drink the water without filtering it first. The runoff from the roof could have contaminants such as bacteria, or viruses from bird droppings. Shingles may also be treated with chemicals to prevent moss growth.

I would'nt go outside and pour myself a nice cup of rainwater, ....but If those survivor guys on TV were willing to drink water squeezed from buffalo shit, I'm down for some filtered or boiled rainwater in an emergency.

That hose should be near the middle of the barrel, this way there is greater water pressure. More pressure means more water flow to the other container.
