Maybe it's because there is so much salt in the fries it's hard to break it down. NaCl has a very strong covalent bond (ionic bond).

But that's just my 2 cents, maybe some chemist can clear this up?

Of course the fries didn't break down! They are mostly oil and salt. That doesn't mean they don't break down in the digestive system!
