It will not trigger a sprinkler system because they work by heat detection. Basically, a small glass "fuse" is shattered by heat, and that is what actuates a sprinkler system.

Smoke was billowing out of Boots in Maidenhead High Street this morning after an alarm fault.
Firefighters were called to the store at about 6.40am but quickly realised the 'smoke cloak' was a false alarm.
They used a positive pressure ventilation fan to blow the smoke clear from the building.

The key is in working with the authorities to make sure that they are carrying the correct risk cards.
The other option is integration with the fire panel.
Either way, the vast majority of fire services use our smoke for simulating realisitic environments for training purposes.

Yes, fog (or anything that obstructs the photoelectric beam inside a smoke detector) will sound a fire alarm system.

Erm, actually you could make it come out of the floor.
Typically though, ceiling down is best (it protects the floor area first, whereas floor up would protect the ceiling area first).
Might give it a try though and see what happens
