yes it is multiplayer 1-2 players (not sure if you can do splitscreen or xbox live but there is multiplayer)

I have done all of these things but they arent to hard.

here are few things i did:

Throw a car in the water than try fishing it out using other floating stuff to stand on, this is pretty hard but doable i suggest using big stuff to stand but its much more challenging when you use small items like car tires.

In keys to the city: (cheat mode)

Spawn ramp while in mid air and try to get as high as you can by landing on them and jumping again, this is pretty easy once you get your timing right.

while in the water spawn a long chain of barrels than shoot the first one and immediatly start spawning them again see how far you can come, dont swim to fast or youll lose the chain also this is only fun when swimming backwards otherwise its pretty pointless.
