Cantonese isn't anybody's 'slang' but the language of the Yue (粤) people who today are considered part of the Han (汉）ethnicity (who you refer to as the 'Chinese' race).The differences between Mandarin and Cantonese can be compared to the differences between and English and Italian. You are correct that there is no 'spoken' language called 'Chinese'. The written language, in both forms is Chinese.

Cantonese itself cannot be considered a full language because it has no written form. There are many words that are spoken in Canto simply has no words in proper Chinese. For ex: "一D人" meaning "these people", "D" is spoken but no actual word in chinese for it.
