  • I would normally add that salt right when its finished, but I tried this one. It's not that salty when you add the salt into the water. I added some mushrooms, the white expensive ones. Cut them into slices then put them after the onions. The sauce, I used pearl sauce and the soy sauce! That gives it more sweetish and sour.

  • Try not to stir the noodles while boiling otherwise they'll turn out sticky and clump together due to starch. boil for 8-10 minutes and you'll have perfect noodles

  • OMG! i was mucking about in the kitchen and did this dish out of my head.. the only difference is that i added minced garlic at the beginning when frying off the spring onion and then i added a beaten egg and some curry powder at the end. I also used 2 minute noodles..my wife loves it

  • I like the noodles more crispy. I boil them only until they start to get soft, about a minute, and then dry them. Then I fry them in homemade lard. WOW! Tasty! (Why people use peanut oil is beyond me, lard is awesome) They make a great bed for a stir fried meat dish.

  • Does the dark sesame oil taste different from the clear kind? I can only find dark sesame oil at my grocery store and the closest asian market is 20 minutes away.

  • @artemisfair : Yes, you want to use a dark (Toasted) sesame oil...that is what gives a nice, deep Asian flavor to foods. The clear sesame oil doesn't have much flavor. :)

  • hey Kai, I followed the exact same way as you did except adding the sesame oil part to my noodle, but it turned out that my noodles sticked together which was so awful... is this because I didn't mix the noodles with the sesame oil? I already separate the noodles using my chopstick though, but it didn't work T.T

  • Dude, dont use a non-stick wok but a proper carbon-steel one which you can season (Natural non stick layer). Also add some red or yellow pepper and garlic in there. You might also add some more spices to the noodles like ginger and ketoembar.

  • @Thecookingfreak This is noodles, not noodles with pepper and ginger. He uses a carbon steel wok mostly but clearly chooses to use non stick sometimes.

  • You can use ramen noodles just make sure you dont cook them too long! But it works perfect. Egg noodles will work too!

  • Its flour noodles... You can get at your local asian market. They are also called Egg noodles like Kai had said in the video.

  • No. Sesame oil has a distinct oriental flavor that can't be replaced. If you absolutely can't use it then just leave it out.

  • @MultiMatt2009 the purpose of the sesame oil is for the taste, i fry some sesame seeds with olive oil since i cant find sesame oil where i live, and it does the job nicely

  • Kai you've boiled the noodles way too much. It's gotta be cooked to a level that the noodles are still relatively firm, so when it is stir fried it maintains with texture along with the crunchy veges.

  • don't learn this way, don't put cold water as the noodle will be too soft without any

    texture. just put 1 teaspoon of pre-cooked

    oil when the noodle boiled and use fan to blow the noodle for 2-3 minutes then start to stir-fry. Don't forget to put few pieces of ginger to the wok before stir fry the noodle.

    Don't use electric heater to cook chinese food if possible as all become without real chinese food taste.

  • This is a great recipe! People may think it appears soggy but its just well done, u can make it less soggy by cooking it for a shorter period, but then it might not be fully cooked. (I might be wrong)

  • The noodles are soggy and mushy for a couple of reasons. First, he is using soup noodles. Then, he overcooked the noodles. Also, the non-stick pan that he was using is incapable of browning or searing. The noodles also were just too wet, so there really was no stir-frying effect. Rather, he was just "steaming" the noodles. Basically, he was just heating and allowing the moisture to evaporate some. This is not stir-frying noodles.
