Think of how you balance a broomstick on your hand, if you've ever tried...Basically, every time the broomstick sways dangerously in a particular direction, you move your hand slightly in that direction, to keep the broomstick from tipping and falling.
Similarly, notice how the flames coming out of the rocket seem to "twitch" back and forth a little in flight -- it's the same principle in action, though every time the craft actually needs to move, the computers "allow" a controlled motion...
My thoughts as well. Looks as if all the crafts were very stable. Was also thinking if the flights were preprogrammed on the onboard computer or if someone was controllling/maneuvering them manually
