The long flights within Canada started later I think so they could compete.

That is maby because they don't have engines that dont can handle an crazy approach / runway. That's because they have stronger engines and like that. The norwegian planes (SAS, Norwegian, Braathens) have not so strong engines, because in Norway can it be very dangerous airports ;)
Ryanair is a low-cost airline, so it benefits from everything that can make money. Some big low-cost airlines are attractive to big companies to advertise on their planes, think of Southwest airlines, Transavia, and the biggist, Ryanair,(Jaguar advertisted on their planes, Cable & Wireless did it, Vodafone also i believe,) and now it's in boeing-colors to promote the boeing company ;)
747-400 (The 747SP hasen't got winglets and has a sort of bump in front of the tailsection), the strainge litthe cessna, 777-200, 757-200, 737-800 (Ryanair doesn't fly any 737-700's. ;) ) I think you may see it as a 747sp and a 737-700 because of the youtube player, it's a bit crushed at the sides, so everything looks fatter :P

They happen because when a wing is generating lift, it creates wingtip vortices, which are the contrails you see in the vid.
They are low pressure regions with little exchange of heat with neighboring regions.
If the temperature in the local region drops below dew-point then the result is the condensation trails.
Get it? it's kinda hard to explain to someone who doesn't already understand.
