If you think he has control of your leg now, wait until he uses the correct technique and actually secures your leg by tightening his legs together to make the knee bar more seure.
although the first application was weak and open, it still would break the knee out. as long as the fulcrum is at the knee and the hips and arms can apply a force and counter force the knee will still break. however the last application was faster and closer to the way I was trained to use this lock, he may have used an open leg hold to simply show us whats going on. however from what I've seen on other vids of the same dojo, these guys are judoka trying to be MMA fighters.
