  • the recipe is probably around 55% hydration or so, looks a little wetter honestly, or a lower protein flour maybe, also, they are doing a fantastic job of dividing, shaping all in one motion, so efficient, perhaps even as fast as a divider/former/shaper that costs 10 grand. Once I saw this in montreal I came home
