  • So what? I'm sure chicken is fine for this. I like lamb for this dish too but we don't need to be way too picky. Think about all the starving people out there that have no access to food at all. Isn't it becoming common for Iranians to use chicken for this dish and to even make a vegetarian version for it? Check out that video clip from "cookingwithmarki" that makes real good chicken gormeh sabzi. And to hell with beef since that is something that I don't eat.

  • thanks for the video....i do it without meat,and without frying, just by simmer boiling, with water and dried parsley flakes, country gravy powder, onion powder, garlic powder,salt, tomato paste, diced potato,kidney beans or frozen black eyed peas,and lemon juice...optional with mushrooms...that is a veggie ghormeh sabzi...frying is not good for you...tastes exactly the same tasty as they make it in iran

  • I love Gormeh Sabzi; it's one of my favorite Persian dishes that my husband used to cook and since he no longer is around to cook it, this gives me the chance to make it myself. I know how to make Fesanjan, and Celery Khoresh, but I've always like the Gormeh Sabzi. THANK YOU SO MUCH!!

    He also made it with beef!

  • I don't know if this product is available in USA but if so, can anyone tell me if Sadaf's ghormeh sabzi dry herb mix produces anything like as good a meal as the fresh herbs/greens would? I tried Iran's 'Yek o Yek' tinned ghormeh sabzi and it was tasteless.

  • @puffinstuffsmum The Dry Herb mix works OK but you do need to add a lot of it.

    You are better off using as much fresh herbs as you can and replace only the herbs you cant get fresh with dried.

    The tinned stuff is just bloody awful and in no way represents the real stuff

  • Would it be totally bitchy of me to say, who cooks ghormeh sabzi like this? LOL. But in your defense, it seems a lot faster this way. I've never had it with chicken before, but I think it sounds good. I will try it like this next time.

  • This was a really nice video. I just have one comment to make to help the viewer. At the beginning, would you be kind enough to list all ingredients needed to cook Ghormeh Sabzi and, if possible, with measurements.... even, if you say a bunch of parsley. It takes the guessing out of it for those unfamiliar with Persian cuisine. I love this dish and can now attempt to cook it thanks to you and your mother. My very best to your family! :o)

  • Yes you can make Ghormeh Sabzi with chicken. Get over it ,people. Even my husbands grandmother used to cook it with chicken when lamb was out. Some people even add spinach. What I really like though, is that the Lady is not Iranian ( like me) and seems to be a really good cook of Iranian dishes.You go Ma'am, heads off to you. He just needs to pronounce the dish correctly though. Brush up on your farsi.

  • @texastussi Haha you're funny! The Lady is my mother and she was born and raised in Iran. However, her background is of mostly Turkish and Russian descent. I was born and raised in Southern California and I'm told that I speak Farsi with a surfer's accent :)

  • @texastussi My first Ghormeh Sabzi was with chicken. It just wasn't right. It's got to be lamb. I also have discovered a few tweaks such as garlic, cinnamon and scotch bonnet chilli. Yummy and healthy dish this :)

  • One of my absolute favorite meals ever!!! Thanks for this video. It's different than the recipe I have. I can't ever seem to find fenugreek leaves, so I usually make it without. Also, I put green onion and lime in mine. It actually sounds good with chicken and lemon!

  • @maxsaint The parsley and cilantro can be found anywhere. The Fenugreek might be a little harder to find. There's a company called Sadaf that distributes Mediterranean foods. Here's a link: sadaf.com/store/product68.html

  • dude you need parsley, CILANTRO , fenugreek, chives and SPINACH for this. the chives and spinach should be a bit more than the other greens.

    I have been brought up in a family who have run number of resturants in Iran as well as London and never have i seen Ghormeh sabzi with chicken.

    The real Ghormeh Sabzi is made with lamb.

  • Honestly, I think almost every Iranian believes everyone else's Ghormeh Sabzi is awful compared to their mothers. I have yet to try some that I like except for good old mom's. (Who is also named Maryam) Haha.

Ive been out of Iran 4 a very long time as well, so I appreciate the fact that u r tryin to preserve u mom's rec. I am guessing that some people back in Iran don't and won't ever understand what this means to us..

  • Thanks for sharing. Persian cooking is the best. I had to laugh at the comments about lamb versus chicken, though. I always make it with cubed beef (I'll try the chicken though). I flavor the beef with salt, pepper, cinammon and a touch of nutmeg when I brown it. PS - if you're cutting up all the veggies (parsley, leek, spinach, etc.), cut twice the amount and then use them for Kukuye Sabzi!

  • @Vietmom2 I believe the red bean is the best compliment to the chicken. The bean, meat combination is important.

  • The way my mom does it is to boil vegetables in water, not fry them. She puts lean beef cubes in it. No oil whatever. Cooking it this way is very healthy.

    And I never heard of chicken in ghormeh sabzi. I won't like it.

  • I can understand why it would appear bland for you. We get used to how we ate our food since childhood. My dad calls my mom's food, "hospital food," since there is no fat and very little salt in it. He makes his own traditional foods with lots of fat and salt in them, which none of us eat.

    On a side note some Argentinian lady once cooked pasta for us placing a boiled chicken leg instead of meat sauce on top of the pasta for each person. I thought that was weird.

  • I was taught to cook this with beef, flat leaf parsley, leek, coriander - they are all variations on a theme - but its a fab dish. I am gonna try chicken next - coz it looks yummy, today however, sabzi is with beef :-)

  • Another way of making this with less oil would be to use spray oils or even a chinese wok would work! But you would need a Gas Burner for that!

    There are 4 herbs used in this dish.

    Parsley, coriandor, Chives(tareh) and Furngreek.

    Also chicken is never used.

    Lamb is the meat to use.
