I did bonk once on a long ride. It was fast and I hadn't eaten anything and it was also freezing cold and I just wanted to get home. I felt a little dizzy and my legs didn't have their usual power. I was almost just flopping them round in a low gear and popped into Subway as there was a big long hill up to my university house. Only other time I did a mile as fast as I could on an empty stomach and felt a bit dizzy but ate an orange and was better.
I would have thought it would be disadvantageous to drink too much during a race as it adds weight and makes you need a pee but certainly drink if you even have a hint of thirst. If you're riding hard you should be able to balance drinking and sweating with a bit of practise and the urge to pee isn't as strong due to the water loss from elsewhere. I'm still having trouble replacing my secondary bottle on the go. Might install a 2nd cage on my top tube instead of the seat tube.

How its made, where its stored, how what we eat effects it , GI rates etc Maybe tell us ur experiences/how u feel when eating on rides :)

Good stuff Harley. Have you used those dried bananas on the longer rides? Not the chips but whole bananas. Dates, figs and those bananas got me through the TDU. Funny watching my mates all hitting the power drinks and bakeries at every stop. "What? You're not eating?" they'd ask. "I never stop" was my reply.

To get rid of the wind, put a high pass filter on the audio at about 200Hz. Then you'll be able to hear the speech.
