  • @TheCuteMoi You can use rice milk. But not milk or cream. It just doesn't have the same fragrance or lightness that rice or coconut milk would.

  • I can never find curry powder at my local stores, but they often have curry paste. Would it be possible to just double up on the paste, or should I try to combine spices to approximate my own? The same with the fish oil. I found a way to make a substitute using anchovies, so I'll try that until I can find a bottle.

  • @sacricolist Amazon.com usually carry lots of herbs and spices...hope this helps.

  • @sacricolist Yeah, I actually prefer to just double up the paste, rather than use curry powder, that stuff just doesn't taste natural to me anyway...

    yeah yellow curry powder works

    i tried it and it tastes great

    its just a bit less spicy than the red curry powder

  • @pawpearls Some of the biggest producers of coconuts are Asian countries. Many coconut related foods/drinks also originated in Asian countries like China and Taiwan.

  • @JoyeuseXI here in Brasil we go to the "brazilian session" to buy coconut milk! =D

    there is a debate if coconut have its origins from southeast asia (not china) and northeast of latin america.

  • Of course we can. We have ingredients from all the continents. However, there are a number of small towns hundreds of miles away from large metropolis. Australians and Europeans who have never been here don't seem to understand how big this place is. Large enough that there are significant regional differences. Stocking for everything in a small town is a bit much.

    Australia just happens to be closer to Asia than America is. Easier to get some stuff.

  • the fat from coconut milk is monounsaturated fat, and it is perfectly healthy for your body.

  • It's about 2 servings, but that is only 1 ingredient, that's not counting the chicken or the rice you'll likely be eating with it. You're likely looking at 600 to 700 calories, and that's Just the chicken with sauce and rice with No Other side dishes. By the time you add on a side dish and beverage you could be talking about a 1000 calorie meal. . . about half your daily calories in One Meal. Too much for me.

  • Chef John, you read my mind! I've been on this curry kick lately, and I've been looking for an easy recipe that just about anyone could make when first starting to cook with curry. I think this will be my dish! :-)

  • what is Curry anyways?

  • ATCRyderX: It's a blend of spices originating in India & Southeast Asia. Depending upon the location, culture & preference of the user, it can contain turmeric, cumin, coriander, fenugreek and red pepper among others. Again, however, it is a blend of many various spices in varying quantities. Some include all of the spices I listed above, some only a few & others use all of them & more. Typically, it's used to create relatively spicy-hot dishes so use w/moderation if you're sensative to spice.

  • Like acorn squash (the regular green ones) but a little creamer and less earthy, it is also a touch sweeter.

  • larry89: In some areas, Butternut squash is used as a substitute for pumpkin. However, while pumpkin is typically used to create sweet dishes (i.e pumpkin bread, pumpkin pie, etc.) here in the US, depending upon your preference, there are also savory & even spicy recipes for both pumpkin & butternut squash (as evidenced by this video). Most of the recipes I've encountered w/butternut squash tend to be more on the savory side, but it's up to you as to how you prepare it.

  • I do exercize daily, and I eat very healthy. That's how I lost 130 lbs. Exercize doesn't do it all, diet is also equally important.

  • Most things involving curry or thai or occasionally Chinese will ask you to use coconut milk.

  • Most Indian curries don't use coconut milk.

  • Curries come form alot of places, brittain naturally grows it's own curry which isn't as spicy or flavorful. Curry is also very popular in the orient and shows up in alot of dishes.

  • Hey, I'm just sayin'. A lot of curries don't use coconut milk, and a lot do. Curries are very tasty, and the variety of ingredients is amazing.

  • Not so with Indian or Nepali curries. Yogurt is more often used and much healthier and less caloric. There's nothing like the richness of coconut milk, but the going up ain't worth the coming down for me. Not when a Yogurt based curry is also quite wonderful.

  • ironbuttermilk: If you really think about it, consider at what time of the year Chef John is posting this recipe...close to Thanksgiving & Christmas. People tend to splurge more & not worry as much about calories at this time of year. If it worries you so much, then don't fix it. But don't ruin it for the rest of us.

  • Sorry to rain on anybody's parade, but i do think it's important for people to realize what they're eating. Only then can they make an in formed choice. People generally assume that a vegetable dish is fairly low calorie and healthy. The calorie assumption would certainly be wrong in this case. I'd rather eat a good slice of pizza than this, if I'm going to eat that many calories. That's my choice. Everyone is free to make their own.

    Most recipes here seem to require a ludicrously hard-to-get ingredients, so you people in the US are damned lucky :)

  • yoshinibble123: It's usually important to follow the recipe the first time you fix a dish to see if you like it or not, one thing you learn as you practice & gain skill at cooking is the art of substitution in a recipe. If one ingredient is prohibitively expensive & you know of a similar-tasting, cheaper alternative, then give it a try. You may find out you like it better your way. If not, then you can always revert to the original recipe or try yet another approach.

  • i'm from malaysia, those ingredient can obtain from supermarket, but not cheap though. like a botol of 500ml oliver oil needs RM40+(about 11dollar).compare to palm oil which cost RM15 for 5L

  • antoniowong07: while it's important to follow as closely to the recipe as possible the first time you prepare a dish to see if you like it in the first place, as you practice & increase your skill at cooking, you learn that you can substitute some ingredients for others & achieve a similar if not identical flavor to the original. Not sure of the flavor of palm oil compared to olive oil, but if you think it tastes similar, then substitute. You never know, you may like it even better.

  • i have no much idea about olive oil, only taste olive margarine, i wonder if they taste alike.

    i think olive oil is much fruitier than palm oil. since it came with that cost i suppose it came with that quality as well. i, myself is not very good in my cooking skill, i only do dish once a while.

  • some of the ingredient this chief using, is hardly to be found in our supermarket here. like chicken broth. yes, i can self-made it, but it's not very convenient to me though( well, not now. cause i'm studying outstation so i have a full facilities i have. ) i try some simple recipe from the chief like the mash potato. it doesn't came out like what was in my mind. =/

    and some of the herbs, i not quite adapt to it just yet. ; )

  • oh yea, the herb. quite un-convenient to get too. those selling at the supermart are in a package like a handful of dill for few ringgit, and only 1 or 2 pinches is used. kinda waste =~

I've dabbled in cooking throughout the years & I wouldn't say I'm the best at it, but it's something I enjoy doing & I've learned a lot as I've gone along. A lot of cooking is simply trial & error. You try a different variation & it either comes out good or it doesn't. If it does, then great. If it doesn't, then you either adjust to make it better or you don't make that dish anymore.

  • Also, as to the herbs, fresh herbs are usually preferable to dried herbs because the flavor is fresher. However, if dried herbs are more readily available & cheaper where you are, then you can use them instead (they also last A LOT longer as well). The thing to remember is when hebs are dried, the flavor concentrates & intensifies so the general rule of thumb is to use one-quarter to one-half the amount of dried herb compared to the fresh herb called for in the recipe to get the desired flavor.

  • i live in malaysia. maybe there are selling in some hypermarket in the capital. but i so far i haven't seen one when i went to market.(i live in rural area)

    they still not many citizens are used to cook westen food yet, maybe that's why it's hard to find here. we don't usually use chicken broth or beef broth in home meal.

  • antoniowong07: Olive oil definitely has a fruitier, lighter flavor compared to some of the other oils I've used before. For example, in Italian recipes, it is sometimes used uncooked & is drizzled on top of soups & salads as a garnish. Also, there are different types of olive oil, each w/slightly different flavors. There's regular olive oil, virgin olive oil & extra-virgin olive oil. Extra-virgin olive oil is the one used most as an uncooked garnish as the flavors are most intense.

  • there are vegetarian fish sauces out there, but you'll most likely have to go to an asian market, to find it. but you never know. you might get lucky and find it at a supermarket. or you can use a light soy sauce. it wont be the same, exactly, but is a good alternative if you can't find the vegetarian fish sauce =)

  • You can use a light soy sauce or just simple salt. Chef John here is simply trying to emulate thai cooking, which utilizes fish sauce alot.
