@bradyischamp Roux is made with any fat, so why wouldn't you use the turkey fat? I can't imagine not using the turkey fat (since that's the way my Grandma made it!), but I have used butter (or lard, but I'm moving away from that in gravy) if I needed more fat, which is especially common with organic birds.
I recommend adding a few teaspoons of cumin to the gravy for a surprisingly delicious kick. You'll be pleasantly surprised. Cumin has a smokey essence and goes AMAZINGLY well with poultry.

@lukedukey I just leave it out and use the same amount of more broth. The gravy comes out gorgeous!

never thought of using the turkey fat for the gravy. usually people disgard that and use butter to make the rioux

If you cook with wine, the alcohol will cook off, leaving very little, if any, in the product. Its fine even if you are cooking for kids!
