Nikola has a great taste and a creative mind to find new recepies for delicious crepes. He prepare not typical crepes but something that you can name it "gastronomie crepes"!!! Always smiling, his crepes and his gentleness make your day.
We were there couple months ago to taste this crepes at Latin Quarter, it is delicious... The guy standing at the back of the old man early on this video was cooking and wearing a chef coat with a small Greek flag on it. When we asked him where they were originally from and what kind of crepe this is, he said this is a Greek Crepe, and show me the little flag of his chef outfit. We went back there twice coz we love the food. Yumm.
He is french, he's "Algerian French" in the sense a black or white person is American even though Indians were there first. Algeria was a part of France and in such he is french.

Go back to basic crepes or well if you want something from Paris...there is a GreatChef video on crepes...harder to do but I bet it taste good.

By country ham he probably means "home made ham" as in traditionally cured pork ham. I think it's called serano in spanish.

He calls this crepe Crepe Savoyarde by reference to the French Alps
