  • I don't get the whole canning thing either. Where am I supposed to get the food? I'd have to buy an awful lot of food to can as I cannot grow it myself. In the city it's probably harder because of the lack of space. Maybe if I lived out in the sticks. But I don't like wide open spaces.

  • home-grown canned tomatoes are the best!! last year i had 4 plants and canned them because i had so many extras. so glad that i did, no store-bought toxic tomatoes compare to the freshness of your own. this year im planting a dozen tomato plants!

  • @Dishtech48 you obviously have not, "mastered it", All that liquid in the bottom of the jars will make the tomatoes spoil. You have to pack the jars full and make sure that you run a plastic spatula along the inside of the jar to release any air, prior to processing them. Those won't keep for long. Try leaving the tomatoes whole or quartered,not chopped so small. Look online for people who have experience canning tomatoes. Good luck, it is worthwhile when done correctly.

  • @SwollenCranium i would not bet on that in the event of any emergency. I learned my lesson when a huge water pipe broke in metropolitan Boston a few years ago. About 6 cities had no "drinkable" water for a week. I heard it on the news and "immediately" went two blocks away to a large CVS pharmacy. They were completely out of bottled water and all soft drinks within "15 minutes". It was almost a riot in there. It's good to have some extra things in case of an emergency

  • @SwollenCranium You won't think it's so "silly" when or if there was a major catastrophe and there is no Walmarts or food stores. Then we will call you "silly" and "starving". I got a root cellar stocked FULL of food. I live at 10,000 ft in Colorado and there are times when I can't get off the mt to go to the "Convenient" store to buy food. All I got to do is dig out my root cellar (outside buried under snow right now) and get some jars. You never know...

  • BEWARE! When we lived in S Calif I canned hundreds of yummies...Tomatoes, Applesauce, green beans...whatever I could...I was sooo proud of my applesauce...I used 2 different apples, From Julian Calif. so had red tinge to my applesauce.

    I was beyond proud of all my beautiful jars I'd spent untold hours &$

    We put them in our garage industrial type cabinets purchased from hospital remodeling.. Small earthquake, my entire cupboard came off the wall.

    I had 3 ft high pile broken jars to clean up!

  • @TheSpecialangels ....Just be sure you place your jars in cabinets secure enough to hold hundreds of pounds of jars...especially in earthquake areas.

    The shaking caused the hardware to come separated and the entire cabinets came down. I was so disgusted and heartbroken, never got a photo!

    So...we moved to Oregon, ha! Having a garden here impossible. my garden just rotted and out of 10 tomato plants I had ZERO tomatoes!

    had 1 tiny zuchinni squash! Spent $200 =soil prep. Was just too cold, soggy

  • @howzerman1 depends if your into growing heirloom plants then baker creek seeds are good but a tad pricey if your growing a few acres. seeds kept dry and cool last 2-3 years in the package but if you freeze them in Tupperware it could last 5-10 years

  • @howzerman1 oh always buy open pollinated seeds because the seeds can be taken from the plant after you grow it and next year you will not have to buy seeds again.

  • I've never canned tomatoes because of something called Botulism. For some reason this used to kill a lot of my grandparent's neighbors off. I freeze my leftover tomatoes for stews and sauce.

  • @armanflint i have eaten 10 yr old canned tomatoes.if you use proper canning technique you will have good food for many years.store in cool dry place for long term storage.if you use the pressure cooker method its one step above boiling water canning method both can be done safely if done properly

  • Absolutely! I haven't done it in a few years but I was doing it every year for quite a while. Tomatoes that is. Pickles sometimes too and beans. Not only do you save money. You will never find a can of food in the store that has the flavor you get from fresh canned foods. The flavor is awesome. I'm gonna get back into it. I did it before for the flavor but now I need to save money!!!

  • People don't know about food that is flavorful and healthy anymore. They just settle for the crap in the stores. 

  • I am always amazed at how people can have that attitude toward food storage. I remember my dad talking about it being "thrifty" and he was one who was born in 1915. He knew it as patriotic and budget smart. I grew up canning with my mom, aunts & grandmother. All had root cellars and we stocked up. Today I was reminded again by mother-nature as to why one should stock up. We had a power outage again due to a winter storm. NO WATER available. This happens all the time across the plains & ppl cope.

  • commercialized produce has lost over 70% of its nutrients due to the severe stripping of the soil... so for the plant to even grow they have to add chemical fertilizers to the ground....... then to keep them alive they have to be constantly sprayed with more chemical pesticides, which never leaves the veggie, nor our bodies after we eat them! when growing your own food you get the necessary nutrients and do not get the cancer causing pesticides! it is a win-win!

  • They really do taste better. The first tomatoes I ever canned looked like that, floaters, safe to eat but don't look so good. It's caused by cold pack. Now I chop and cook my tomatoes and they look beautiful in the jars. I've noticed at the store there are so many "diced" tomatoes now. Like they're raw and no flavor. I didn't see any just regular canned tomatoes except stewed which I eat but don't cook with. So the best to buy are crushed, sauce and paste. And a good salsa ;-).

  • Why can the tomatoes that you've grown instead of buying tomatoes in the store? Because they taste better. Lots better! Any produce you grow tastes better than store-bought produce because your fruits and vegetables ripen naturally on the vine instead of being picked while still green and shipped in ice-cold containers halfway around the world. Unless you like the nearly non-existent flavor of the immature produce you get at a store, grow, can, and enjoy your own.

  • Here is somthing to argue about. I personaly dislike store bought tomatos because for one the fresh ones has a weird texture to it and not as good of a taste as home grown. for canned they have perservitives [sp?] in them and a possible chance of pesticides, so thus home grown tomatos canned and eaten is better over all...plus it saves money

  • My dad used to get a small trailer load of 2nd tomatoes from a farm and preserve or can as you say, them all. Half of it was made into tomatoe sauce which was the best! Nothing like that red sticky stuff you buy which is mainly apple, vinager and coloring anyway.

    My grand parents place always had the smell of that sauce and it is now a vivid part of my childhood memories. They had a huge vegie garden in the back yard and preserving in glass was a way of life. I still have the recipe somewhere.

  • When my kids were young, I used to can. Did 50 qts of everything : tomatoes, spaghetti sauce, corn, green beans, pickles, pints of chili sauce, jams, jellies. Now I stock up on beans and rice, canned vegatables, canned tuna and chicken to help me through the hard times..

  • I beg to differ. It is not something you need to know. Yes, it is useful. Yes, it does save money. Yes, it provides a healthy year around alternative. But, this skill set is not mandatory.

  • @radbcc It can be mandatory to can when the only food you can get is if you can only grow it yourself, or don't have good refrigeration, or are only able to get what you need in limited supply. I'd consider a grocery stores' 3 day stock as a limited supply. Canned food is good when there is a blackout.

  • I learnt how to do the can can in paris. We didn't do it with food though. We did it in panty hose.

  • If the power grid ever goes down long enough for my chest freezer food to thaw, I'm going to get those boxes of canning jars down, and fill them up. Get yourself a pressure cooker (for meat and low acid foods), and a canner for veggies. You can do it on a camp stove if you have to.

  • If you want the full nutrients of foods than you must eat it RAW, otherwise canning and cooking leach nutrients.

  • @ILuvCaroline It would be nice to have raw foods available 12 months a year but that just isn't feasible for most due to the high cost. If the economy goes bust then home grown and preserved may be the only out for people.

  • @garybrownfie Just stating a fact, because of what was stated in the video. Plus, if you live in the South or out West it may be possible to garden year round, it is for me. You can even grow food inside so yes it is feasible. Food prices are high but you can get food stamps, so I don't see ppl having to depend on canned food, and if the economy goes down you would depend on homegrown food not canned.

  • @ILuvCaroline No, that is completely wrong. Cooking breaks down the cell walls in foods, which allows your digestive system to absorb more nutrients.

  • @ILuvCaroline that's all fine and good but fresh fruit and veggies don't stay fresh long and canning keeps them from going to waste and provides food for your family in case you lose your job or get sick and can't work. Sometimes you just have to do what you have to do to get by.

  • 2011 canning totals for us 137 pints of salsa 47 qts of spagetti sauce 32 qts chili 26 qts reg tomatoes and 12 qts of my own special tomatoe sauce. I even froze about 15 qts of tomatoes and I canned a bunch of pickles of all types froze a bunch of green beans

Canning is great preparation for a rainy day, a bad season, or if the day comes (a hurricane, earthquake, disaster, economic collapse ) that the owner of mega-word would rather close their doors than feed the hungry townspeople. Boomd is happy knowing he's got food. The other guy is happy being ignorant. Ignorance is what's got us in this economic and environmental mess... change, or go the way of the dinosaur.

  • To say the least, canning, drying, etc. is also a great way to save lots of money! And I would much rather have a jar of homemade/homegrown vegetables any day!! You can't beat the taste!

My grandmother, who lived through the Great Depression, and has had dozens of cans since then, and still does. The best tasting green beans you've ever had comes out of her mason jars. I love learning new gardening/canning/ food preservation skills. Gives me power! Thanks for the video and vote for Ron Paul, the choice is crystal clear.

  • Actually I going to buy a 19 Qt canner this year, we planted a Heirloom Organic garden last year and got 1,400lbs of food, after filling 3 freezers I realized this isn't good, actually it was after watching the move "28 days later" I realized freezers are useless with no power and a generator is only as good as you gas supply.

    Just learned to bake bread last weekend, nailed it... This weekend baking breakfast bread, with dried fruit & nuts.

  • Its important to learn new things, even if you don't actually use the skill all the time -- that is a part of the human experience. That's what i say to people who act ignorant....

  • Canning is wonderful but drying is even better. In case of a need to leave quickly the dried food stores easily and keeps for an indefinite period. It retains its nutrients much better and nearly any fruit, vegetable or meat can be dried.

  • @jerusalemasteroid That was my point in saying if the need arose it was much easier to take the dried food along rather than canned. Canned food doesn't necessarily mean canned in glass. Individuals may also use metal blanks to can inside a pressure canner. That's odd...spell check doesn't know "canner" is a word.

  • @jean9910 You can buy food dehydrators but savvy people like my Mom used an old car. She just kept the windows rolled up to keep out the pests and laid the fruit on cheesecloth. You can Google "dehydrating food"and get plenty of ideas.

  • @jean9910 I own the Nesco FD-80 and it does a good job at an affordable price. If you purchase one go ahead and get two extra racks as it only comes with 4. You may want some fruit roll platters, too.

  • most people do not realize how many pesticides are in what they eat, or how nil their real skills are, or how their whole relationship with nature and food, temperatures and seasons, would change if they grew something, and really took the time to enjoy it, nor do they realize the tiny fraction of plant varieties they are offered at stores, or how impractical it would be to offer more, or how much the quality of life has actually gone down in this consumer-grocery-processed food kind of way

  • great skill to learn yes. but canning 30 tomato plants constantly is a waste of time! atleast get a variety of nutrition going with different plants. and most of dont have time to can and harvest tomato;s everyday since we work... so for some of us, quiting are job or turning are hobbies into tomato canning is a complete waste of time! tomatos are the last thing to worry about . maybe get vegetables or fruits that a hard to get now .because they will be the first to go

I don't know where you get your info that all the vitamins are gone after canning but you're wrong. For one thing,tomatoes have to be cooked before they produce Lypocine.. a powerful antioxident that's also very good for the heart. People have been living healthy lives from home canned food for many years.

  • @nerblebun i dont know where u get the idea that i said vitamins are gone after canning. dont get my words twisted fabricating stuff i said. what i said was a fraction of the vitamins and minerals remain after cooking most vegetables. most of the nutrition will sit in the liquid. you dont know that? when u cook vegs and fruits u loose a good portion of vitamins. raw is the best.can u can raw vegs and fruits?

  • 1. I think that people should learn how to can because they want to learn, do something worthwhile and fun, and because they want homegrown, not because there will be a food shortage.

    2. a question: are the canned veggies such as the tomatoes flavorful when canned?

    3. someone mentioned not using old lids, what if you just can't get or come by new lids? what then? spoilage? what if you can't get new lids anywhere, what is one to do?

  • @Amathos I'm not a canning expert, but

    1Not because of food shortage, but a) healthier than tinned with preservatives and sodium. b) reduce carbon footprint from shipping c) take advantage of local crops rather than food grown who knows where.

    2 You get out what you put in. May not taste as good as fresh, but put in fresh ripe flavorful veggies and can them well (not overcooking) they will be better than tinned.

    3 No, can't reuse lids. Hardware & grocery stores sell canning lids. Can reuse rings

  • @craig79792000 There is a huge difference between raising livestock for your own consumption and raising livestock for consumption by the public.If you raise your own for your own consumption that is great.Those who raise cattle,pigs,sheep,chickens,etc etc for public consumption are mandated and regulated by the federal government via the fda.I would encourage anyone with the means to raise their own organically grown meat and veggies.You must be a democrat,put head back in sand!

    I'm not into politics. I don't vote either. I don't even watch television anymore.

    There's very few thing's I care about in this life and I don't waste my time with politics.

    That's wasting your life worrying about somebody you don't know.

    Always remember, "What somebody says can turn out to be different then what they really mean".

    Don't worry about politics, live your life while you got it.

  • @xxxxLEADERxxxx this is exactly why we are in the shape we are in. Everyone has tuned out and stopped educating themselves regarding the real issues of politics. Do me a favour? If you really don't care, take ten minutes out for the rest of us and vote for Ron Paul. Sticking your head in the sand only works for so long when the wolf is creeping up behind you.

  • @Lean540 1 reason the USA is messed up is because people like you buy into all the tv propaganda of this or that person claiming he'll save us all and everything's going to be just fine. You seem to care to much about somebody, "You don't even know". My head is not in the sand young man. No government official is going to save you.

  • @xxxxLEADERxxxx I stopped watching television four years ago. Also, I am not a young man, I am 47 yrs old. My stance on all politicians is that they are corrupt to varying levels. I never said I cared about you, in fact, I care about us all. We all contributed to where we currently are and it wll take all of us to get us back on track. Pretending things are ok and `just living your life`` is not helping anything. Fortunately for guys like you, somone will do the work for you, as always.
