  • I'm from New Mexico, my family has been here over 300 years...this is all wrong! This is a nice attempt if you were serving this dish in New York, in some fusion resturant but here in the southwest it is blasphemy!

  • This is a great variation to Chiles Rellenos. The recipe varies from state to state in Mexico some filled with fresh cheese some with meat etc.

    I usually use a Poblano pepper.

  • I'm sorry, but those are not chiles rellenos, you have lots of mistakes... I'm from México...

  • @JJx7894 Those are anaheim's; very common in the US southwest with Hatch NM being a well known growing area. The chilies you are probably thinking about are poblano's.

    and to make real mexican sauce for the chile rellenos u need tomatoes garlic onion consome " chicken flavor" water & then blend...

    and real chile rellenos "real mexican style" we use egg for the arina

  • thats more like stuffed chile poppers than real Chile Rellenos , i thought you were suppose to use pablano peppers for that. and use egg's whipped to cover them and dip them in the oil. thumbs down for you siR

  • I want to know why you don't do the eggs to coat the chile rellenos. I have seen some of these mexican chefs use a egg white, and mix that to a stiff peak, and then lightly stir in the egg yokes. Then coat the chile in a flour and then into the egg mixture.

    So what I am tring to say is I would like request a steps into this traditional recipe.

    Plus I would love to know how to roast and peel the skin off the plablano peppers.

  • am sorry but you are wrong we don't cook like that the ciles rrellenos first of all we use chile poblano and we don't use any beer so learn and then cook

  • the slit method is clever,( no toothpicks) but it seems like all the seeds would be unpleasant - though I must say most of the mexican restaurants at which I have had these still do have plenty of seeds. And I have had them both ways but the chile powder roux is more common at the restaurants in my area. The boiled or roasted tomato/garlic/chile sauce may be more traditional. The beer batter seemed to adhere nicely - better than some of the beaten egg white batters I have seen.

  • With all my respect to you chef, but This is your OWN PERSONAL Mexican recipe.

    We do not add many condiments like you did, also we really make the salsa roja in other way (boiling tomatoe, chiele, etc).

    ONE OF THE SECRET OF MEXICAN AND LATIN FOOD IS THAT WE TAKE TIME FOR COOKING (NOT IN 20 OR 35 MINUTES) WITH NATURAL INGREDIENTS.

  • @bochitobug I'm not Mexican but I too learned the real way to make them from my Mexican Friend and it takes A LONG TIME, I don't use a beer batter, I whip the eggs myself till my arm hurts. This guy makes it way too fast.

  • @Nekrosculptor He stuffed a chili. Quite literally that's all you need to do to have "chili relleno".

  • Gross no one wants to eat the seeds, you remove them carefully. I use my fingers or wash them out. I learned from my mom how to cook authentic Mexican food. :D
