I'm from New Mexico, my family has been here over 300 years...this is all wrong! This is a nice attempt if you were serving this dish in New York, in some fusion resturant but here in the southwest it is blasphemy!
@JJx7894 Those are anaheim's; very common in the US southwest with Hatch NM being a well known growing area. The chilies you are probably thinking about are poblano's.
thats more like stuffed chile poppers than real Chile Rellenos , i thought you were suppose to use pablano peppers for that. and use egg's whipped to cover them and dip them in the oil. thumbs down for you siR
@skept214 Wheres your cooking vid at...I'd love to see you make them with poblanos... and then you can show us how you use the whipped eggs... If you can't produce a cooking vid with your method, thumbs down to you SIR... OH, and you spelled POBLANO wrong...
I want to know why you don't do the eggs to coat the chile rellenos. I have seen some of these mexican chefs use a egg white, and mix that to a stiff peak, and then lightly stir in the egg yokes. Then coat the chile in a flour and then into the egg mixture.
So what I am tring to say is I would like request a steps into this traditional recipe.
Plus I would love to know how to roast and peel the skin off the plablano peppers.
Dam look at all these haters. If you guys could do better than make your own dam video. I bet the end result is some dam good chile rellenos. You're just gonna shit it out anyway. Nice video!
am sorry but you are wrong we don't cook like that the ciles rrellenos first of all we use chile poblano and we don't use any beer so learn and then cook
@mamijessica21 Okay, you learn how to spell and use punctuation, then put your two sense in. Because if you don't, then you'll sound like a complete dumbass. Oh yeah, people have their preferences, also make your own video. I'd love to see you in front of the camera.
@cassleer totally I want one of those too....Chef I know your reading this can you please post and let us know where we can get one
Many thanks and much love....Oh by the way don't mind these negitive post about your beer batter I have done them with beer batter and the whipping eggs way they are YUMMY
the slit method is clever,( no toothpicks) but it seems like all the seeds would be unpleasant - though I must say most of the mexican restaurants at which I have had these still do have plenty of seeds. And I have had them both ways but the chile powder roux is more common at the restaurants in my area. The boiled or roasted tomato/garlic/chile sauce may be more traditional. The beer batter seemed to adhere nicely - better than some of the beaten egg white batters I have seen.
@bochitobug I'm not Mexican but I too learned the real way to make them from my Mexican Friend and it takes A LONG TIME, I don't use a beer batter, I whip the eggs myself till my arm hurts. This guy makes it way too fast.
Gross no one wants to eat the seeds, you remove them carefully. I use my fingers or wash them out. I learned from my mom how to cook authentic Mexican food. :D

This is a great variation to Chiles Rellenos. The recipe varies from state to state in Mexico some filled with fresh cheese some with meat etc.
I usually use a Poblano pepper.

Not a bad video, but what's with the totally lame advertisements in there? Fuzzy and unreadable in any case.
And so easy to just jump over.

With all my respect to you chef, but This is your OWN PERSONAL Mexican recipe.
We do not add many condiments like you did, also we really make the salsa roja in other way (boiling tomatoe, chiele, etc).
ONE OF THE SECRET OF MEXICAN AND LATIN FOOD IS THAT WE TAKE TIME FOR COOKING (NOT IN 20 OR 35 MINUTES) WITH NATURAL INGREDIENTS.

It's white cheddar

@sfnmwebed Chiles rellenos with white cheddar? You should use Oaxaca cheese
Nekrosculptor 9 months ago 2
@Nekrosculptor He stuffed a chili. Quite literally that's all you need to do to have "chili relleno".

We actually did not remove the seeds.
