I think the uchiha are so good with fire jutsus is because they use shape manipulation katon.

Take a look at jiraiya, he's awesome with katon but all his jutsu are just big expulsions of fire... uchiha can do a spinning fire ball, send fire chakra along a thread or make dragon shaped attacks.

there are 3 types/levels of goukakyuu (grand fireball). The first you see when kakashi tests naruto, sakura and sasuke in the bell test, then you see sasuke doing a goukakyuu thats rather weak(didn't even form a ball). Then in the middle of the series its rather developed n starting to form a ball. In the end vs naruto at the waterfall, he uses a fully skilled goukakyuu. In the manga where he fights itachi you see an even bigger one ;)
