That's a funny bit during the post-cooking interview. No wonder Sakai is Ryouri Tetsujin-ou (King Iron Chef = left out "no" for my reasons).
I'm sure I've seen that actually. I don't think it's a bad idea to be honest. I'd be embarassed to serve that in my restaurant, but at home... with the lights out... wow!

it's shochu.
Japanese distilled beverage.
But there are similar spirits in other East Asian countries like soju.
