It's more likely that you'll be playing a Gouki then to find the opponent in 99% stunbar when he has full health. :)

Makoto is most easiest with Abare Tosonami. If you have both meters full and do karakusa into SAII you got him.

Akuma has had poor stamina in most Street fighter games. In Capcom Vs SNK 2, I never use Shin Akuma because his stamina is truly terrible (although his speed and strength are very good). Fight against Shin Akuma and his stamina is very good and his strength is ridiculous.

The damage was not set to high, Gouki really takes it like a little bitch. Not to mention Makoto taunted. Her taunts increases her attack power.

Attack power plus + Akuma takin it like a little bitch=game over.

No, you wouldn't, because Gouki has decent zone control, preventing the enemy from getting in on you and being able to do stuff like this.

Fights don't start with full super bars, you can hit characters out of taunts and a good Gouki player is always on the attack, preventing such combos.

Gouki still deals out a lot of damage, has huge combos, air fireballs and dive kicks. The just gave him low defense to balance out his offensive nature.

Crouching characters take more damage and when Makoto perofrms her 3xtaunt her damage increases alot. The damage is set to normal.

Because Makoto taunted twice. Her taunt, like Ken's, gives an added boost of attack after a couple of hits. Add more taunts and the attack rises even higher. Go ahead and test it in training mode.
