What is this supposed to be, a recipe? Ha... ok, for everyone: Just use as much starch flour (Cornflour/cornstarch) as normal flour. Put some salt into it. Some thyme works really great.
Fill it up with cold mineral water until it gets the consistency of glue. Leave some globs. U better use it straight after finishing.

not to mention his technique isn't really correct. You should only lightly mix your batter, it should be a homogeneous mixture with he had suggested.

cold water will make the batter crispier when deep-frying it. some guides even suggest to use ice cold water.
