What you should do with the arms and legs is, for the legs, add a hit box at the knee so it does not bend forward and, for the arms, add a hit box at the elbows so they don't bend backwards

Wouln't that create an extra point of rotation? So a knee would then have 2 pivots?

well I don't know much about how this works, but by observing this, I see that the boxes don't go through one another and that they rotate in a direction were no collision in present, so I think you should try it and see how that works...again this is coming from a beginer so I know almost nothing about blender...
