Of course he jumped. Taker and Kane's combined strength could have probably lifted him off the ground, but by then they would have choked him for real. Jumping facilitates the move and puts less strain on his neck. Most wrestlers, including the smaller, lighter ones, jump because it's safer than being genuinely lifted by their necks.

when kane chokeslammed Big Show himself that was just plain unrealistic. Big show was waay too big even for a fake move like that wasn't convincing. They just wanted to emphasize Kane. Undertaker couldn't do it himself either.
